A New Source for Vitamin D
New research has found that vitamin D can be obtained from eating mushrooms. Michael Holick, a prominent expert on the subject, led a study team who tracked the vitamin D levels of 25 adults over a twelve week period. The subjects were given either an extract of dried white button mushrooms or a supplement containing vitamin D. The results, which were reported by the American Society for Biochemistry and Molecular Biology, showed that eating mushrooms boosted the vitamin D levels just as much as taking supplements. Adults needing to boost their vitamin D levels now have a dietary option.
