Don’t Leave Your Veggies in the Dark

An interesting study has come out of Rice University showing that exposing vegetables to light 12 hours a day boosts their anti-cancer effects.  Normally, we keep our veggies in the refrigerator and they are left in the dark for several days.  This breaks up the natural light cycle veggies normally experience, which alters their own production of certain substances.  Researchers claim that vegetables produce protective properties in the morning light to ward off certain bugs.  It is these same substances that have anti-cancer effects for us humans.  But will we actually make time to move around our vegetables?
